Ingredients


2 Avocado

1 cup Bacon Slices, diced

2 tbsp Butter

1 cup Cheddar Cheese, Shredded

2 lbs Flank Steak

4 large flour tortillas

TT Hot Sauce

2 tsp Olive Oil

1/2 cup Onion, Chopped

Cooking Instructions


Level up your breakfast with this meaty Flank Steak Breakfast Burrito. Filled with tender grilled flank steak, bacon, potatoes, onion, cheese, scrambled eggs, and avocado, this epic roll is made start-to-finish on the Pit Boss Platinum Series KC Combo Grill. These breakfast burritos are perfect for meal planning and can be made ahead and frozen.

Note: This recipe uses Pit Boss Chop House Steak Rub.

  1. Fire up your Pit Boss Platinum Series KC Combo and preheat to 425°F. If using a gas or charcoal grill, set it up for medium-high heat. Preheat griddle to medium-low flame.
  2. Drizzle olive oil over steak, then generously season steak with the Pit Boss Chop House Steak Rub. Grill steak 3 minutes [depending on thickness of steak] per side for medium-rare. Remove steak from grill and allow the steak to rest for 10 minutes, then thinly slice against the grain. Set aside.
  3. Turn off the grill, then place tortillas inside to warm.
  4. Add bacon to the griddle and cook for 2 minutes, then add potatoes to bacon and cook for 2 minutes. Add onions, then cook mixture until bacon is crisp, potatoes have browned, and onions are translucent. Set mixture aside.
  5. Melt butter on griddle and then cook scrambled eggs. Set aside.
  6. To assemble breakfast burritos, sprinkle cheddar cheese on tortillas. Add scrambled egg, sliced steak, potatoes, and sprinkle with more cheese. Wrap tortillas, by folding sides in, then rolling from the bottom up. 
  7. Serve hot with fresh avocado and hot sauce.
