1 TSP EXTRA-VIRGIN OLIVE OIL

PIT BOSS SWEET HEAT RUB AND GRILL

Some days you’re just stretched too thin. There’s only so much time in the day after all. Thankfully, this Cheesy Barbecue Chicken Breast recipe packs a ton of flavor without having to do a lot of work. Plump chicken breasts are wet brined in the refrigerator to prevent them from drying out while cooking. Then after a light seasoning with the Pit Boss Sweet Heat Rub and Grill, they are thrown on the grill and barbecued. Finally, gooey, melted aged cheddar is added. You can then eat them on their own with a tasty side or as part of a chicken sandwich or burrito. However you prefer to enjoy this simple recipe, we’re confident you’ll be going back to grill this one often.


Chicken Breast Wet Brine

This simple brine will help prevent your chicken breasts from drying out during the cooking process. Since chicken breasts have little to no fat, they can lose moisture quickly. Wet brining allows the chicken breasts to soak in a salty/liquid solution where they absorb moisture and flavor.

To wet brine the chicken, simply soak the chicken breasts in chicken broth inside a large plastic container and let it sit in the refrigerator for at least 2 hours.


Wood Pellet Recommendation

For spicy and savory aromas, we recommend using the Mesquite, Hickory, and Pecan hardwoods that make up the Pit Boss Classic Blend Wood Pellets.

Note: this recipe uses Pit Boss Sweet Heat Rub and Grill seasoning.

  1. Fill your hopper with your choice of pellets (we chose Competition Blend), preheat your grill to 350°F.
  2. Remove the chicken from the brine. Pat the breasts dry and lightly brush olive oil on both sides of the chicken. Take your knife and slice diagonally across the top of each breast. Sprinkle a lit amount of Pit Boss Sweet Heat Rub and Grill on each side.
  3. Barbecue your chicken breasts for 30 minutes. Next, place a slice of cheddar cheese on top of each breast.
  4. Heat for another 5-10 minutes or until the cheese has fully melted into the incisions you made earlier. Remove and serve for a tender chicken breast with a spicy kick and hot cheesy center. You'll receive too much credit for a recipe this easy.
