2 cups aloe leaf juice

1 tsp Coriander, Ground

2 tsp cracked pepper

4-6 Garlic, Cloves

1 (3-inch) Ginger, Fresh

4 cups no sodium added chicken bone broth

¼ cup Olive Oil

4 tsp paprika

6-8 lbs pork shoulder/butt

1/2 Sweet Onion

2 packets Truvia to sweeten above aloe juice

2 tbs Or 2 tbs Swerve brown sugar Truvia – honey substitute

Cooking Instructions

If you've been hunting the internet for a healthy pulled pork recipe that is flavorful and moist then look no further. This recipe incorporates a cast iron roasting pan to lock in a juicy marinade with sugar free sweet ingredients. Spices such as coriander, garlic, aloe juice, paprika, and ginger root give this dish a uniquely Hawaiian flare.

If you want to overestimate and add a gram or two of carbs you can, but this recipe is extremely LOW carb and low sodium. We used sugar substitutes, no sugary juices, and 7 lbs of leaned pork yield about 23oz+ of lean pulled pork that didn’t absorb all of the marinade.

  1. Set your grill to “smoke”. Once the pot catches turn the grill up to 300°F. Make sure your flame broiler is closed, you want to use indirect heat for this recipe.
  2. Add all spices into a bowl (salt, paprika, cumin, coriander, pepper, onion powder if needed). Set bowl aside.
  3. Grate the ginger into a separate bowl (wet ingredients bowl).
  4. Mince or smash the garlic cloves into the same bowl.
  5. Dice onion and add it to the ginger and garlic (if no onion sub onion powder).
  6. Juice 1-2 limes and add to the “wet” ingredients bowl.
  7. Add 4 cups chicken bone broth.
  8. Add two cups aloe leaf juice w/lemon and add two packets Truvia to sweeten.
  9. Add 1-2 tbsp Truvia honey substitute. Mix and set bowl aside.
  10. Add the oil to your Pit Boss Cast Iron and coat the bottom and sides. Place the pork in the cast iron roasting pan.
  11. Take your dry rub and coat the pork.
  12. Pour the wet ingredients around the pork, into the Pit Boss Cast Iron Roasting Pan.
  13. Cover the roasting pan with the lid and set it on your grill.
  14. Check the pork every couple hours (basting if you prefer). When internal temperature reaches 195°F (after around 6 – 8 hours of cook time), it should easily start to pull apart. Don’t pull apart the whole shoulder yet.
  15. Remove the Pit Boss Roasting Pan from the grill and set aside to allow it to rest for 1 hour. Remove the lid to help speed cooling.
  16. Once cooled, shred the pork into a separate bowl, removing the fat as you go.
  17. If you want to add some of the marinade to the pork for additional flavor, make sure you skim the fat off the top first and discard.
  18. Viola! Pair with fresh grilled veggies, delicious fruit or make tacos or salads! So many options for this type of protein.
