Crispy on the outside and creamy on the inside, these Gluten Free Mashed Potato Cakes are a great way to use up leftover mashed potatoes. Like a twice-baked potato in patty form, these savory cakes are loaded up with tender potatoes, bacon, scallions, cheddar cheese and Hickory Bacon seasoning.
