Gluten Free Vegan Pumpkin Apple Muffins

1.5 Cups All Purpose Gluten Free Flour

1 Cup Almond Milk

2 Tablespoon Avocado Oil

1 Teaspoon Baking Powder

1/2 Teaspoon Baking Soda

1/2 Cup Brown Sugar

1 Teaspoon (plus more for apples) Cinnamon, Ground

1 Batch Flax Egg (1 tbsp flaxseed meal, 2.5 tbsp water)

1/3 Cups (plus more for topping) Gluten Free Oats

2 Granny Smith Apple, Peel, Core and Dice

3/4 Cup Pumpkin Puree

1/4 Teaspoon Salt Salt

1 Teaspoon Vanilla Extract

1 Tablespoon Vegan Butter

    Crisco or baking spray
    Muffin tin
    Measuring cups

  1. Preheat your grill to 350° F.

  2. Prep flax egg in large bowl and set aside.

  3. Add vegan butter to a warm skillet, add apples and cinnamon to taste. Saute until soft (3-4 minutes).

  4. Place pumpkin puree, brown sugar, almond milk, avocado oil, and vanilla extract into the bowl with the flax egg.

  5. Place the flour, salt, cinnamon, baking powder and baking soda in a sifter. Slowly sift out the dry ingredients into the bowl. Stir to combine as slowly adding the mixture.

  6. Add the apples and oats, stir until combined.

  7. Spoon muffin mixture into each tin, or liner, evenly – sprinkle additional oats on top.

  8. Bake on your grill for 25-30 minutes, until a toothpick comes out clean. Rotate the pan ½ way through the cooking time.

  9. To make it extra yummy, we added some butter on top when we ate them!
