Cooking Instructions

Spoil yourself & your guests with this mouthwatering, garlic herb crusted prime rib recipe. This one is easy to prepare and chill overnight for maximum flavor absorption. Then all you have to do is let the prime cut slow roast for 3 hours on your grill and you have yourself one rich and juicy prime rib to enjoy for a special occasion like Christmas Eve or Thanksgiving.

This garlic and herb crusted prime rib calls for garlic cloves, fresh rosemary and thyme, and extra virgin olive oil to be blended together in a food processor to deliver heightened flavors and the rub will form a delicious crust on the outer layer of the meat as it cooks.

Note: It is recommended to use Competition Hardwood Pellets with this recipe.  

  1. In a food processor, blend together the garlic, rosemary, thyme, sage, and oil until a rough paste forms. Place the prime rib on a sheet pan over a wire rack and rub the prime rib generously with the herb paste on all sides.
  2. Season the prime rib with Pit Boss Chop House Steak Seasoning generously on all sides, then chill uncovered in the refrigerator overnight, or for 12 hours.
  3. Once the prime rib has chilled for 12 hours, heat your Pit Boss Grill to 250°F and grill for 2 hours or until the internal temperature of the roast reaches 110°F, then increase the temperature to 400 and grill for an additional 15-30 minutes, or until the internal temperature reaches 125 - 140°F.
  4. Remove the prime rib from the grill, cover tightly in foil and allow to rest for 30 minutes. The final temperature of the prime rib should be 125 - 140°F after resting. Serve and enjoy!

For a crunchier crust, sear all sides of the prime rib for 1 to 2 minutes in a cast iron skillet or over direct flame at the end of the cook, before resting.
