Start up your Pit Boss. Once it’s fired up, set the temperature to 400˚F.
To assemble the sandwiches, lay two slices of cheddar cheese on either side of each piece of bread. Follow with two pieces of brisket, sliced in half. Then, add 2 tablespoons of barbecue sauce and several jalapeno slices. Sprinkle with Sweet Rib Rub and top with the remaining bread slice.
Repeat with the remaining sandwich.
Melt the butter in a sauté pan and cook the sandwiches until golden brown on each side, about 2 minutes on each side. Remove from the pan and serve.
