1 lb Bacon
1 1/2 tsp Baking Powder
1 1/2 tsp Baking Soda
1 Cup Cocoa, Powder
2 Egg
1 3/4 cups Flour
1 Cup Milk, Whole
1/2 Cup Oil
1 tsp Salt
2 Cups Sugar
2 tsp Vanilla
1 Cup Water, Boiling

Cooking Method

Start your Grill on smoke with the lid open until a fire is established in the burn pot (3-7 minutes). Preheat to 250°F. Once your grill is preheated, place bacon strips on the grates. Smoke for 1hr-1 ½ hrs. or until desired crispiness is achieved. Set aside. Increase set the temperature to 350° F and preheat.

Combine the flour, sugar, cocoa, baking soda, baking powder, and salt. In another bowl, mix the eggs, milk, oil, and vanilla. Add the wet ingredients to the dry. Slowly add the boiling water. Mix until combined. Line cupcake tins with paper liners. Once incorporated, pour into prepared cupcake tin.
Bake in your preheated 350° F Grill for 20-25 minutes. Cool on wire rack. Once fully cooled, frost with your favorite flavor of icing. Top with a strip or half a strip of bacon.
