Soak the bamboo skewers in water for about 30 minutes (the longer the better).
In a food processor, combine orange juice, oil, soy sauce, thyme, allspice, nutmeg, cinnamon, garlic, onions, ginger, lime juice, salt and pepper. Puree until smooth.
In a large resealable bag, pour all but 1/4 cup of the mixture in along with the sliced up chicken breasts. Seal the bag and marinate in the fridge for 2 - 3 hours.
Preheat your Grill to 450 degrees F.
Skewer the chicken and grill for about 7 minutes. Flip and continue grilling for about 5 minutes, or until the chicken is cooked through and grill marks appear. Serve with the remaining 1/4 cup of marinade.
