Thankfully, this Cheesy Barbecue Chicken Breast recipe packs a ton of flavor without having to do a lot of work. Plump chicken breasts are wet brined in the refrigerator to prevent them from drying out while cooking. Then after a light seasoning with the Pit Boss Sweet Heat Rub and Grill, they are thrown on the grill and barbecued. Finally, gooey, melted aged cheddar is added. You can then eat them on their own with a tasty side or as part of a chicken sandwich or burrito. However you prefer to enjoy this simple recipe, we’re confident you’ll be going back to grill this one often.
This simple brine will help prevent your chicken breasts from drying out during the cooking process. Since chicken breasts have little to no fat, they can lose moisture quickly. Wet brining allows the chicken breasts to soak in a salty/liquid solution where they absorb moisture and flavor.
To wet brine the chicken, simply soak the chicken breasts in chicken broth inside a large plastic container and let it sit in the refrigerator for at least 2 hours.
