Ingredients


1/2 cup Apple Juice

2 lbs Apples

2 tbsp Brown Sugar

5 tbsp Butter

3 tbsp Butter, Melted

TT Caramel

3/4 tsp Cinnamon, Ground

TT Cinnamon-Sugar

3/4 tsp Cornstarch

2 Eggs

1 cup Flour

2 tsp Lemon Juice

Pit Boss Tennessee Apple Butter Seasoning

1/2 cup Water

3/4 cup Milk



Cooking Instructions


Breakfast or dessert, there’s no wrong time to eat these Smoked Apple Crepes. The apples are gently smoked, then sliced thinly and mixed into a sticky sweet brown sugar, cinnamon and butter sauce. While the apples are cooking, cook up the crepes right on the Pit Boss Platinum Series KC Combo griddle. Serve the crepes warm with a generous heap of smoked apple filling, then drizzle with caramel and an extra dusting and cinnamon sugar.

How to Make Crepes 

  1. Prepare crêpe batter: combine eggs, milk, water, flour, and 3 tbsp of melted butter in a blender, and blend until smooth.  Refrigerate for 30 minutes. 
  2. Melt 1 teaspoon of butter on a pre-heated griddle that is set to medium-low heat. Then add ½ cup of batter, and spread with the bottom of a metal spatula, working quickly, as the batter cooks fast.  Cook one minute per side, until edges begin to brown.  Remove from griddle, set aside, and repeat with remaining batter. 

Note: This recipe uses Pit Boss Tennessee Apple Butter Seasoning. 


  1. Fire up your Platinum Series KC Combo and preheat to 225°F. If using a gas or charcoal grill, set it up for low, indirect heat.
  2. Peel, halve, and core apples.
  3. Season apples with Tennessee Apple Butter then place directly on the grill grate, and smoke for 1 hour.
  4. Meanwhile, prepare crêpe batter: combine eggs, milk, water, flour, and 3 tbsp of melted butter in a blender, and blend until smooth.
  5. Refrigerate for 30 minutes.
  6. Remove apples from grill, cool slightly, then slice thin.
  7. Place a cast iron skillet on the grill and melt 3 tbsp butter with brown sugar, cinnamon, cornstarch, apple and lemon juices. Cook for 5 minutes until thick.
  8. Add apples and cook for another 3 to 5 minutes, stirring to coat apples in sauce.
  9. Remove from grill and set aside.
  10. Preheat griddle to medium-low. If using a standard grill, preheat a cast iron skillet on medium-low heat.
  11. Melt 1 teaspoon of butter on the griddle.
  12. Then add ½ cup of batter, and spread with the bottom of a metal spatula, working quickly, as the batter cooks fast.
  13. Cook one minute per side, until edges begin to brown. Remove from griddle, set aside, and repeat with remaining batter.
  14. Spoon ¼ cup of apple filling into the center of each crêpe, then quarter-fold into a triangle.
  15. Serve warm with additional apple filling, drizzle of warm caramel, and a dusting of cinnamon-sugar.
