Cook the pasta according to package instructions. Drain.
In a skillet, melt the butter over medium low heat. When the butter is melted, whisk in the flour and cook until the mixture smells toasty and looks like wet sandy, about two minutes. Slowly pour in the milk, whisking constantly, and let cook for 5 minutes until thickened, whisking constantly.
Remove from heat and whisk in the Pit Boss Applewood Bacon Seasoning and shredded cheddar cheese until you have a smooth cheese sauce. Add in the crumbled bacon and elbow noodles.
Turn your Pit Boss Grill onto the smoke cycle and smoke your macaroni and cheese for 5 minutes. Remove from grill, top with green onions if desired, and serve.
