4 lbs Chicken Wings, Whole

1 cup Cornmeal

2 Eggs

1 cup Flour

2 tbsp Pit Boss Champion Chicken Rub

1 cup Milk



Cooking Instructions


Grilled fried chicken may seem impossible, but you can get crispy breaded chicken without the deep fryer or any of the oil. For this healthy version, the chicken wings are breaded in a flour and cornmeal mixture, then grilled until golden brown. The breading and chicken skin crisp up just as they would in a deep fryer without any of the mess.  

Wood Pellet Recommendation 

To add a savory, bacon like aroma, we recommend using our Hickory Hardwood Pellets with this recipe.  

Note: This recipe uses Pit Boss Champion Chicken Rub.  

  1. Fire up your Pit Boss Pellet Grill and preheat to 300°F. If using a gas or charcoal grill, set it up for medium-low heat.
  2. Place chicken wings on a sheet tray, then cut off the tip of each wing with a knife, or scissors. Pat dry with a paper towel.
  3. In a mixing bowl, whisk together flour, cornmeal, and Champion Chicken. Set aside.
  4. In another mixing bowl, whisk together milk and eggs. Set aside.
  5. Form “breading” station: wings, egg wash, seasoned flour, sheet tray. Dunk each wing in egg wash, then coat in seasoned flour. Set aside on a sheet tray, while coating the remaining wings.
  6. Place wings directly on the grill rack. Flip/rotate wings every 10 minutes for 45-55 minutes, until golden and “fried crisp.”
  7. Remove from the grill, rest for 10 minutes, then serve warm.
