Preheat your Pit Boss Grill to 400˚F. To prepare the sweet potatoes, place on a sheet of aluminum foil. Rub with ½ tablespoon of olive oil and ½ tablespoon Pulled Pork Seasoning, then wrap tightly in foil. Repeat with the remaining sweet potatoes. Grill for 20-30min, or until the sweet potatoes are easily pierced with a knife. Remove from the grill. Allow to cool.
Once the sweet potatoes have cooled, cut them in half and scoop out the centers. In a separate bowl, combine the pulled pork and barbecue sauce. Fill the hollowed out sweet potatoes with the pulled pork, black beans, red pepper, and cheese, then place on a sheet pan.
Preheat your Pit Boss Grill to 350˚F. Grill the stuffed sweet potatoes for 10-15 minutes, or until the cheese is melted. Serve immediately and enjoy!
